At a basic level, it makes no difference. There are two camera modules for defy, the red (Bayer) and green (SOC). There are a few ways to tell which camera your mobile has, like naked eye examination etc. The best way to do it is to use an app called catlog which tells you whether you have a Bayer or a SOC module.
If you flash the leaked official 2.3 ROM on a defy with red lens, it will allow you to record 720p videos, while that with a green lens wont allow you.
I have a defy with red lens but I did not flash the official 2.3 rom because that would not allow me to downgrade to 2.2 in case I want to claim warranty. I have a rooted phone with cyanogen mod 7.1 running on it.

If I root my defy, warranty is gone?
what is difference between 2.3 ROM and cyanogen mod 7.1 after rooting? can you go to original factory 2.2.2 android?

can I take a back up of my existing factory installed 2.2.2 and install cyanogen mod 7.1 and then return back to factory setted 2.2.2 to claim warranty?

Official leaked 2.3 sbf does not allow you to downgrade. However Cyanogen mod allows that and you can go back to factory state. However 720p recording does not work on CM7.

Thanks @gadgetcrazy I got a green lens of SOC on motorola defy.I want to save warrany and still would like Ginger bread.. so what you suggest?I am fine with no 720p recording as I have SOC green lens.Only thing is that all features should work. I had read that if you upgrade to 2.3.x then either camera dont work or your wifi stops or you get some other sms problems etc... is all that true?.please guide steps which I can follow and also roll back for warranty.Thanks in advance !

You do void your warranty once you root your phone and in order to install cm7 you need to root your phone. In order to get your warranty back you'll need to flash your froyo backup and unroot your device.
