They would not have to strictly monitor traffic, peeking at a few fields in the IP header should be enough.

I doubt it. They will definitely sniff first few bytes of packet of SIP

I have been using iPredator for a few years now. Never used it on the phone. I do not even make cellular calls from my phone so this new development does not really affect me. In any case I moved to Idea few months ago. Quite happy with them!
