saw this video from phone buff testing iPhone 17PM on WiFi vs 5G and in the ending this particular thing was mentioned, that how would the Modems affect battery life when using 5G

Sorry, I just skimmed through the video. I don't think he mentioned if both phones have the same battery health.

There are more differences where the 17 has an LTPO display, while the 12PM is a standard OLED.
Different chipsets, ignoring the modem, whether cellular or wifi.
Screen sizes are vastly different.

He also didn’t clarify on which WiFi technology hes using

is it Wifi 5,6 or 7 router and what about band is it 2.4,5 or 6ghz

Same goes with 5G as well
5G SA vs 5G NSA (which is a discussion we were having here as well)
