I wonder whether anyone can intercept the communication and figure out where the FW files are hosted by Jio and pulled down automatically by the routers?

This can be done through Wireshark on the PC or by going through the Firefox Inspector . The CDN address(URL) can be copied from there. It will be in plain downloadable form

I am having the old white router (JCO500) and the firmware date is 4th Dec 2019. Can anyone with the same router confirm if this is the latest version (R1.177)?

Yes. And the speed I've mentioned was tested using Iperf3 from LAN to WiFi so the only bottleneck would be the WiFi speed.
