I have no doubt that they are showing high data usage but I think there is no way to prove it.

Yes, I have also observed that consumption of data shown is much more that actual use.
How to keep track? Any means to monitor actual usage?

Router may have some option like 'traffic statistics'. Turning it on should give you the amount of data used by each dhcp device.
