1. IP/MAC address of device used to connect
2. Connection time(Start/End)

They can't get MAC Address unless their own application gets it from the OS.
Most VPNs at least claim to not log IP Addresses of devices connecting to it. Whether this is true or false can't be known.

I think some VPN Providers like PIA have been subpoenaed in the past and had basically no info or logs to give to court. Now that PIA is owned by Kape Technologies it may not be the case.

They don't need to log IP or MAC to restrict connections. They can simply see how many users are connected at a time.

VPN service provider logs your ip when you connect to their service. Without knowing your ip it cannot send or receive packets. It will be cleared when server restarts.

This is when multiple hops vpn become useful as the last vpn server will log ip of first vpn server. I think with mullvad you can have 3 hops, last one as browser proxy.
