This doesn't need a lot to investigate. Google scans all your emails as and when you receive them. As long as you have consented to using Google's services, your profile data is being constantly built and updated, down to the last details such as where you like to order from often, what food items, which apps you use, how often and at what times of the day. You don't need to even give email address to a website. If you use a website from an IP, and if that website uses Google Ads services, accessing your Gmail, or simply having a smartphone connected to the same wifi network, is analysed by Google as originating from the same person.
