Along with the season 2 finale of The Mandalorian, Lucasfilm have announced what seems to be another spin-off series. The Book of Boba Fett is slated for December 2021. It will follow Temuera Morrison as the title character and Ming Na-Wen as Fennec Shand, his bounty hunter companion, following the immediate events of The Mandalorian season 2. The focus seems to be on Fett retaking the criminal underworld. It is currently unclear whether this is a whole new show or change of focus for season 3 of The Mandalorian.

Disney already announced that the Mandalorian S3 will debut December 2021 but as of today, that's when The Book of Boba Fett will debut. There won't be 2 Star Wars shows running currently so either this is a spin-off or the S3. Also, the book of Boba Fett is already undergoing shooting. So nobody knows.
