I am mainly opting for and iOS due stability and reliability, expecting her to hold on to it 7 years atleast, she did great for 5 years with her last Android device

I guess iPhone will be a better option, given the form factor and the stability it offers. On the Android side, there's Moto given its simplicity and bloat-free experience, but none of their devices are in the 6.1" size category or less. 6a would have been better if the Tensor chip was more than 2-3 generations old. Right now, all Tensor users are beta testers and that chip will get better with time.
Its better to avoid Pixel. If you have an old iPhone, let your mom get acquainted with iOS. Also, be wary of pathetic battery life on iPhone SEs. My father got comfortable with iOS, but small screen, abysmal battery backup and flimsy charging cables bothered him. Finally went for Edge 30 after 2 years of jhanjhat.
