software is installing while the phone is running. Nokia has not officially stated it i believe but people have reported that n8 has pixel style seamless updating.
i did not wait for the phone to download it in the background. but it downloaded, installed and restarted without going to that android updater screen on my previous phones.
miui also does something similar. the updater app downloads the update and prompts you to reboot. or it'll reboot at set time , say morning 2AM, and then self installs the update and put you in the homescreen all by itself. Im assuming ASOP android is something similar?
well i do not think you can set a time on pre-pixel nexus. installation happens after reboot with the android with open stomach icon (similar to mi note with has a progress bar with mi branding iirc) and then boots to android.
the only difference here is that installation happens while phone is operational. there is no downtime except for the restart that took slightly more time than usual.
